Vinification & Aging: The grapes are hand harvested in September with several passages to select the slightly over-ripened grapes. In the cellar the grapes are gently pressed and fermentation takes place at low temperature for 3 – 4 weeks. The wine is aged in cement tanks “sur lies” (on yeasts) for 6 months.

Description: Intense straw yellow with greenish hue, brilliant. Elegant hints of acacia and delicate notes of field flowers. Gentle, soft, intense and long lasting.
Food Pairing: Fantastic with whitefish, grilled prawns, oysters, lobster risotto – all the fruits of the sea. Grilled chicken in lemon sauce. Green olives and hearty appetizers.
