Vinification & Aging: |
The grapes were carefully selected and placed into small crates. After soft-pressing, the fermentation and maceration lasted about 8 days in stainless steel tanks at controlled temperatures. The wine was daily pumped over and the cap punched down. The must was then transferred to new, small, medium toasted barrels where it went through the malolactic fermentation. The wine aged for 12 months in 30% barriques, 30% in 1 year old barriques and 40% in 1 year old tonneaux. This is followed by at least 24 additional months in the bottle. |
