Vinification & Aging: Harvest for this wine takes place in the middle of October. The grapes are hand-picked and, then, they are gently crushed. After that, the mash of berries must go for fermentation in stainless steel tanks for 20 days. The malolactic fermentation takes place in big casks where the wine is also aged for 10 months. Then, it is bottled and aged for 1 additional month prior to its release.

Description: Aromas of raspberries and violets. On the palate, warm, sweet tannins that lead to a velvety finish.
Food Pairing: Shellfish with light sauces, raw fish and fish baked in the oven and in foil. Good match with white and delicate meats
