Vinification & Aging: Fermented in stainless steel tanks for 30 days. During maceration, the cap was punched down daily to extract polyphenols. The wine aged in small French barriques for 8 months followed by an additional 6 months aging in the bottle prior to release.
Production: 350 cases
Alcohol: 13%
Description: Deep ruby with violet hues. Scents of blackberries and marasca cherries. Round and velvety. Suitable for long term aging.
Food Pairing: Excellent with red meat, medium to mature cheeses.
