Vinification & Aging: The grapes are harvested in mid-September. After destemming, the alcoholic fermentation starts immediately and the must remains in the tank for 7 days with the skins at 82° F. Once the alcoholic fermentation is completed, the separation of the clear must that had been already pressed goes through the malolactic fermentation for 1 month. Then, racking starts; barrels are cleaned and the wine ages for 15 months. The wine the rests in the bottle for 6 months prior to release.

Description: Deep ruby red color with shades of violet. Aromas of red berries, especially blackberry, and black pepper, notes of toasting, coffee and cocoa. Soft tannins, full-bodied and structured. An elegant wine which ages excellently.
Food Pairing: Perfect match with roast, grilled meats, all red meats, wild game and aged cheeses.
