Vinification & Aging: Chianti Classico DOCG is obtained with a very low yield per hectare, a careful selection of grapes, vinified at controlled temperature to preserve the maximum of aroma, and is aged in French barriques for seven to nine months. After its time in the barrique the wine is also aged in the bottle for at least three months to give it a further roundness and smoothness.

Description: The Chianti Classico Castello di Selvole is an intense wine, smooth and round, and well structured. Ruby red, very
intense color, and full and rich on the nose. In the mouth the wine is very powerful with cherry, red fruits, roast coffee beans, with balanced acidity, mature tannins, and a long, supple finish.
Food Pairing: Red meat, pasta with meat sauce, stews, strong cheeses, any type of meat stewed, but is also a nice meditation wine.
