Vinification & Aging: The cultivation of the vines is done naturally, protecting the surrounding environment. After the harvest, the grapes come to the cellar where they are placed in stainless steel tanks and pressed. Subsequently, they are transferred into a temperature regulator to drop the temperature of the grapes down to 50 °F. The grapes are softly pressed again at low pressure. Then, the must is pumped into another tank where it rests for 24 hours at a low temperature. The following day the residuals are removed and the fermentation can start with a clean must. Periodically, the must is pumped again to eliminate residuals on the bottom of barrels and tanks. The wine is then racked for aging: 1 year in barrels and 6 months in bottle prior to its release.
