Vinification & Aging: Once the grapes are pressed, the wine goes through a process of cold maceration for a period of 12-18 hours. The process continues with a second press after which the product is fermented in oak barrels for 10-15 days, 3 months with “bontonnage” and four months in steel. The wine is, then, bottled to allow the sparkling process to take effect.

Description: This is a rosé sparkling wine, surely out of any classical parameter, because of the power and structure that the Nebbiolo tendrils always have to offer.
Food Pairing: Owing to its structure,this wine can be a simple aperitif as well as a pair to appetizers, and even very elaborate and fatty dishes.
