Vinification & Aging: The nebbiolo grapes that make this wine are hand-picked. Then, they undergo organic withering for three months prior to vinification. Then starts the, temperature-controlled, traditional vinification “a cappello sommerso” (submerged hat) twith maceration on the lees. After a brief transfer into stainless steel tanks, the wine ages for at least 18 months in oak barrels. It is then, bottled and released.
