Vinification & Aging: |
The grapes were hand selected from 20 year old vine and soft pressed. Fermentation and maceration lasted about 10 days in stainless steel tanks at controlled temperature levels between 77-82° F. The wine was daily pumped over and the cap punched down. It then went through the malolactic fermentation and was allowed to age for 6 months in stainless steel tanks, followed by at least 6 additional months in the bottle prior to release. |
